Hugh Fearnley Whittingstall has produced many books and TV shows under the River Cottage brand,  his book Meat is widely regarded as one of the best on the topic. 

Hugh is passionate about ethical food production, his skills are technically excellent and the recipes are presented in a very approachable style. 


The book covers many traditional British recipes with excellent versions of the classic steak and kidney pie, shepherds pie, glazed ham (gammon).  He covers topics of heritage breeds, farming practices.  There are lots of pointers to help you understand what happens when you cook meat which you will use over and over again.
